Handmade Pastas & Gourmet Sauces
Join Chef Laura as she shows you how to turn simple, fresh, and locally grown ingredients into hearty & wholesome meals. Handmade Pasta & Gourmet Sauces Class will teach you how to prepare 2 different styles of fresh handmade pasta. Class attendees will create hand rolled, hand cut, and hand shaped fresh pasta and will learn how to prepare accompanying gourmet sauces. Tagliatelle ( Long Wide Flat Noodles) and Garganelli ( Cut & Shaped like Ziti) are quite popular in Northern Italian cooking, both styles are perfect for hearty rustic sauces. Laura will demonstrate how to prepare the perfect dough and sfoglia (pasta dough sheet) and how to roll and hand-cut both of these pasta shapes.
The class breaks out to prepare and knead their own batches of the dough and then will roll, shape,and cut their pasta. While the pasta is resting Laura will demonstrate gourmet sauces to pair with the fresh pasta. Pasta will be boiled and sampled with the sauces, and class attendees will take home their extra freshly made pasta to cook and enjoy at home. Class discussion includes how to choose the perfect pasta flour, understanding the importance and uses for semolina, how fresh eggs influence the dough texture, and why olive oil is so important to making exceptional fresh pasta.
