Cooking Classes

.

We are offering several classes in 2024. Class details and descriptions can be found below. Class fee is $25.00 per person, and private classes for your own group of 8 or more can be accommodated. If you see a class program you like and would like to re-create as a private event please email orders@shopdelavignes.com or if the class is sold out, let us know your interest and we can usually accommodate adding another class date. To purchase tickets click here or click on the class below. All Classes are held in person at 197 Huntingdon Ave, Waterbury CT. Chef Laura also does offsite classes with appropriate facilities.

Classes are held on Saturdays from 3:30-5:30 or Sunday Morning's from 11-1:00. Each class is a unique blend of chef demonstration, hands on interactivity, and general culinary knowledge building.

Class includes recipes & instructions for all preparations discussed and demonstrated in the class. Classes are fun and educational, bring your aprons and your appetite's, the classes are full of great things to sample and taste during the event, both the items made in the class and several other tasting items from products available in the store will be available to sample during the class.

Children 10 and older are welcome but must be accompanied and supervised by an adult, each child must have their own ticket.

 Winter Soups & Fun with Focaccia Breads

Classes on Saturday Feb 10 3:30PM or Sunday Feb 11 11:00AM

 Join Chef Laura as she shows you how to turn simple, fresh, and locally grown ingredients into hearty & wholesome soups. Nothing beats a hearty winter soup! She will demonstrate techniques and tips for 2 easy & hearty soups that are perfect for cold winter days, ideal for dunking the fresh made breads

Chef Lauras shares her secrets for super easy and delicious homemade focaccia breads, a thick version perfect for snacking and dunking in sauces or soups, and thinner version for making sandwiches.  Her traditional Northern Italian style focaccia will be your new favorite thing to make on a winter weekend. Fun with Focaccia shows the importance and ease of a make ahead dough, the methods for flavoring and seasoning the breads, and what items work perfectly to complement the breads such as sundried tomatoes, herbs, olives, and cheese, and techniques for making perfectly dimpled crusty focaccia. Chef Laura will have finished focaccia breads ready to taste, and class attendees get to take home fresh made raw dough batches to bake at home and customize their own flavors. Class includes recipes & instructions for all preparations discussed and demonstrated in the class. Fresh Made Cavatelli Pasta & Gourmet Sauces Class

Date: Saturday February 24 at 3:30PM or Sunday February 25 2024

Cavatelli Pasta is a traditional southern Italian hand rolled pasta, using our custom blend of pasta flour, fresh made ricotta, and eggs. The class will learn how to make fresh ricotta for the pasta and then the making of the pasta dough. After the dough is made the class breaks out into work stations to each roll their own cavatelli's to take home. While the pasta is resting, Chef Laura will show how to make 2 simple sauces to pair with the fresh pasta, one olive oil based with savory vegetables, and another simple passata red sauce. Chef Laura will then demonstrate how to cook the fresh pasta to the prefect texture, and the class will get to sample & taste the freshly made pasta with both sauces, if desired.  Class will get to take their freshly made raw pasta to cook & enjoy at home.  Class includes recipes & instructions for all preparations discussed and demonstrated in the class. Olive Oil is the perfect ingredient for traditional Italian and New England style cookies. Recipes using olive oil for baking creates sweet confections that use healthy fats and create perfectly textured cookies. Chef Laura will demonstrate several techniques and recipes for creating delicious cookies, fresh baked cookies will be available to sample, and class attendees will get to make & bake cookies to take home. Gnocchi Cooking Class

Handmade Gnocchi Pasta & Gourmet Sauces

Is it Pasta or is it technically a dumpling? Chef Laura will discuss the roots of this delicious northern Italian dish, and demonstrate an easy traditional recipe to create perfect pillowy & chewy Gnocchi. After the dough is made, she will demonstrate rolling technique and the class breaks out into work stations to each roll and form their own Gnocchi to take home.  Learn to make this classic Italian pasta from scratch, including several filling varieties.  Join Chef Laura as she walks you through the best flour selection for this style pasta, how to create creamy ricotta cheese from fresh milk, flavor pairings for fillings, and sauce to compliment your finished raviolis. The class breaks out into work stations to each create their own Ravioli to take home.

Mozzarella & Ricotta Cheese Making

Have you ever made mozzarella by hand or Ricotta Cheese by hand? Join us and learn how to make these delicious Italian staples. Class participants get to practice cutting curds, and stretching the mozzarella by hand, and forming fresh brined mozzarella balls. Several recipes using the fresh mozzarella and fresh ricotta, paired with Delavignes olive oils and balsamics will also be demonstrated and sampled. Class includes recipes & instructions for all preparations discussed and demonstrated in the class.
