Genoa salami comes from Italy’s Genoa region. It is mildly spiced pork seasoned with garlic, salt, ground and whole peppercorns, wine and traditionally dry cured like most other Italian salami. Genoa salami is the foundation of any great Italian sandwich or antipasto, hearty cold sandwiches; fried with eggs; as a base for red or white pasta sauces or pressed into grilled panini sandwiches.
